Bacon Mayonnaise Deviled Eggs- GAPS Approved

There’s really no point to putting other foods on the same plate as these delicious deviled eggs because it’s all you’ll want to eat. 

This is one of those – step away from the plate- kind of meals.

Take a dozen eggs from a pastured chicken and place them in a stainless steel cooking pot. Fill with filtered water to cover the eggs. Add one teaspoon baking soda and one teaspoon apple cider vinegar to assist in peeling the egg shells.

Bring the pot to a rolling boil. Turn off the heat, cover and let sit for 10 minutes. Pour the eggs into a clean kitchen sink allowing them to break as they hit the sink. Immediately rinse with cold water and return the eggs to the pot or large bowl filled with cold water and a good portion of ice, let sit for 20 minutes. This will make the eggs easy to peel.

Peel all the eggs under a slow thin stream of water. Cut all eggs in half lengthwise and pop out the yolks into a separate bowl. Add one cup bacon mayonnaise, a handful of fresh chopped cilantro and a dash of salt. Add this filling to a ziplock bag or frosting bag and fill the egg whites. 

Top each egg with a slice of jalapeno. Enjoy!
