Chocolate Chip Cookies – GAPS Approved
There are few treats that linger in your head like a fresh chocolate chip cookie. These are the ones we love and tolerate well! In fact, these are the pans literally 5 minutes after they came out of the oven!

The base recipe of blanched almond flour,like this one, while others can source clean chips already made.
8 tablespoons grass fed butter, like Kerrygold
4 tablespoons local honey
3 teaspoons vanilla, preferably homemade
3 cups almond flour
12 ounces GAPS approved chocolate chips
Mix butter and honey on high until frothy, about 10 minutes. Add remaining ingredients and mix until smooth. Drop by teaspoon onto non-stick cooking sheet, pressing relatively flat if needed. Cookies with a thick middle and thin outer edge will burn at the edges before the middle is cooked. Bake at 350 degrees for 11-13 minutes. Cookies taste better not browned.
