Easter Bunny Cups – GAPS Approved

Easter treats can be healthy and tasty with these adorable chocolate filled cups with bunnies on top.

They make a great table decoration or centerpiece.

First, make chocolate from this recipe or by using melted GAPS legal chocolate chips if you can find them. Chocolate can also be made with this recipe. Spread a cookie sheet with candy cup liners and fill with chocolate. Pick up each cup and roll the paper until the chocolate creeps up the sides of each cup. Chill in the refrigerator, remove paper cups and line the cookie sheet with just the chocolate cups.

In a bowl stir together 1/4 cup grass fed butter and a half cup home brewed sour cream. Add honey to taste if desired, we omit this. A small sprinkle of coconut flour can be added if the filling needs to be made firmer.

Fill the chocolate cups with the sour cream and butter mixture.

In a second bowl mix together 1/4 cup unsweetened coconut flakes with a small amount of freshly juiced kale for the desired green color. Too much kale juice for a darker “grass” makes it taste like kale so less is more. Kale coconut – not cool. 

Top each cup with the green “grass”. 

 

Bunny heads are made with this recipe. A toothpick will hold the bunny to the cup filling.

    Great information! When I clicked on the ingredients links, I found that 2 of them won’t link properly. They are the cocoa butter and the vanilla bean sources. I hope they can be fixed. Thank you.
