Fried Zucchini – GAPS Approved
When zucchini flows from the garden, the kitchen heats up with delicious treats. Fried zucchini is just one option that pleases even the most critical palate. To make fried zucchini, slice zucchini circles about a quarter inch thick or slightly thicker. Too thick is difficult to eat. Place each slice into an egg wash. An egg wash is simply pastured eggs beaten with a fork. Some use a small bowl, I find a pie pan is the easiest vessel to do the egg and flour wash. Salt and pepper sprinkled in the egg wash adds flavor. Flip the zucchini circles so both sides are bathed in egg. Put each ring from the egg into almond flour (preferably blanched).

Place each circle in hot lard or tallow.
Frying zucchini in a cast iron skillet will re season your pan automatically.
Cook until the sides start to brown, then flip to cook the other side.
Sprinkle salt and pepper to taste and enjoy. The only problem with this dish is they disappear as fast as you make them.
