Jalapeno Poppers – GAPS Approved
Jalapenos are one of the easiest vegetables to grow, and they are ready in favorable numbers. As a food high in vitamin C, they aid in pulling free radicals out of the body. Their heat is credited with assisting in eliminating parasites.
If you are sensitive to the heat, be sure to remove all the seeds and especially the white membrane inside the pepper.

Slice the peppers into 3/4 inch lengths, the goal is for them to be bite sized.
Fill the insides of each pepper slice with homemade cream cheese or properly prepared cream cheese.
Roll each piece in two pastured eggs beaten with a fork. Then roll each piece in almond flour.
Place the prepared pieces on a cookie sheet so they are not touching.
Cook at 350 degrees for 25 minutes or until golden brown.
These jalapeno poppers make a great appetizer but are even more delicious the next day.

These look delicious! I wish I could try them but unfortunately I don’t tolerate eggs too well 🙁
