Lemon Drops – GAPS and Paleo approved

This lemon drop is sweet and sour goodness that will change the way you dessert forever!

A small dose of lemon is GAPS phase 1, larger amounts of lemon are Full GAPS. Some people find success with lemon essential oil at GAPS phase one, however, taking lemon essential oil internally is not GAPS compliant.

[yumprint-recipe id=’12’]Recipe:

1 cup coconut oil

1/4 cup fresh squeezed lemon juice (or organic bottled lemon juice)

2-3 tablespoons local honey

zest from 1.5 lemons

Blend up all ingredients in Vitamix, food processor or other appliance until smooth. Place contents into a frosting bag with the flower tip. Squeeze out flowers onto a non-stick cooking sheet (like this one). Freeze. Enjoy!

    Is the coconut oil in its solid or liquid state? And do you eat these straight from the freezer? Thanks!

    When using lemon essential oil, how many drops would I add & is it going to change the consistency of the lemon drops?
