Pancakes – GAPS Approved

GAPS pancakes put traditional pancakes to shame. The three base ingredients of squash, nut butter and eggs can be amplified with cinnamon, vanilla extract, rich butter or even ground sausage mixed into the batter. Left to themselves they are a little slice of heaven, satisfying and nourishing.

GAPS pancakes are GAPS stage 3, when rebuilding. The introduction of nut butters adds variety and additional nutrition. Stage 2 is highly detoxing and rebuilding. Stage three introduces avocado and nut butters. Avocado is a flag telling you the status of healing. If avocado is not passed, it is best to stay low and slow instead of pushing through. It’s a signal telling you more healing needs to happen.

For those who are not on GAPS, these pancakes, made with real food ingredients, will satiate and not cause sugar swings. 

 

These pancakes are simple. Take any nut butter, any squash and five, blend them in a cuisinart, Vitamix or blender. One of our favorites is one cup cashew butter, one cup white scallop squash or zucchini and five eggs. When the batter is smooth pour it onto a hot skillet greased with butter. Cook as you would Standard American Diet (SAD) pancakes.

These pancakes respond and taste the same as SAD pancakes. When bubbles appear and  the edges lose their glossy shine, flip.

There are many recipes online that say they are GAPS pancakes but are not stage 3 GAPS pancakes of nut butter, eggs and squash. We stayed on stage 2 for a year and quickly progressed to Full GAPS. When we hit GAPS pancakes, we followed a recipe online that claimed itself to be GAPS pancakes but instead only used eggs and banana – which were painfully sweet and not worth eating. These, however, are compliant with early stage intro, if using ingredients that are tolerated. 

Adding more butter or other liquid to thin the batter can create crepes.
