GAPS Pizza – A Ketogenic Comfort Food

Pizza is a comfort food that is often missed on a ketogenic protocol or the GAPS healing protocol. This recipe holds together well and adds a comfort food flare that is unrivaled.

First mix together 4 cups of quality cheese, gouda is used above, 6 eggs, 1 cup of almond flour, salt and pepper to taste.

Spread the mixture with a spoon onto a non-stick cooking sheet placed on a cookie tray. Spread it as thin as you can without there being holes.

Cook at 350 for 25 minutes, until the edges and top are slightly browned.

Top the pizza with your desired toppings. Make a note, this crust doesn’t absorb any liquid so the tomato sauce should be thicker, not runny or watery. If the sauce is filled with too much liquid, the liquid will run off the tray and drip onto your stove and cause smoke. 

Cook at 500 degrees for 12-15 minutes, or until the cheese is melted and browned. 

Mozzarella cheese is not GAPS approved as it has too much lactose for the GAPS tract. Advanced GAPS protocol people, who are coming off GAPS, often tolerate it just fine. Cheeses that are GAPS approved, easier to digest, are asiago cheese, blue cheese, camembert cheese, cheddar cheese, colby cheese, gorgonzola cheese, gouda cheese, havarti cheese, limburger cheese, muenster cheese, romano cheese, roquefort cheese, stilton cheese, swiss cheese and any other hard block quality cheese.
